Chocolate Party Puffs

Cocktail puffs (make 60 puffs)

1 quart vanilla ice cream

1 quart heavy cream, whipped

1 tablespoon sugar, or to taste

1 teaspoon vanilla, or to taste

1 cup chocolate syrup

1 16-ounce jar maraschino cherries, well drained

Make cocktail puffs according to directions. (Recipe on page 73.) Slit cooled puffs and pull out any dough strands that may be inside. Fill shells with vanilla ice cream. Freeze on a tray in a single layer. When frozen pack in plastic bags and store in freezer until ready to use.

To assemble, whip the cream; add sugar, vanilla, and chocolate syrup. Fold slightly thawed puffs and cherries into the cream. Serve immediately from a glass bowl. Makes 20 servings of 3 puffs each.
